You know what would never appeal to me? Turnip and maple syrup soup. Luckily, I tasted it before I knew what it was. It is DELICIOUS. My fuss pot kid even agrees, declaring, “Good! Soup!”
- 3 tbsp butter
- 1 large onion, chopped
- 1 large carrot, chopped
- 4 cups of turnip, cubed (2 medium-sized turnips)
- 5 cups of chicken or vegetable broth
- 2 tbsp of flour
- salt and pepper to taste
- 1 potato, cubed
- 2/3 cup of milk
- 1/3 cup maple syrup (the real stuff, not Aunt Jemima's)
- Sauté onions, turnips and carrots in butter on low for 10 minutes. Add broth, potatoes and flour. Cook until potatoes are softened. Mix in the blender til smooth. Add milk and maple syrup.
Gotta pay the bills...
